Ingredients: 20 Oz. Barilla® whole grain rotini 6 Tbsp. Extra virgin olive oil 1 Lb. Shrimp, cooked and diced 2 Cucumbers, small dice 2 Red peppers, small dice 1 Cup baby spinach 1 Cup feta cheese, crumbled 1/2 Cup cherry tomatoes, halved 4 Tbsp. Red wine vinegar Salt & black pepper to taste
Bring a pot of water to a boil.
Cook pasta 1 min. Less than package directions.
Drain pasta and place on a sheet tray with 1 tbsp. Of olive oil to cool.
Mix half of the cheese and all other ingredients in a bowl.
