Instructions:
Preheat oven to 375° f. Toss cauliflower in olive oil and roast in the oven for 5-7 minutes or until brown. Set aside. Meanwhile, bring a large pot of water to a boil, cook the pasta according to the package directions. In a skillet over medium heat, cook the shallots, garlic and thyme in the butter for 3-4 minutes until slightly golden. Add the mushrooms and cook for 2-3 minutes, season with salt and pepper. Add wine and reduce by half. Add the broth and cream then bring to a simmer, season to taste. Add the roasted cauliflower to the sauce. Drain the pasta and combine with the sauce.
